Risotto alla Primavera with King Prawns

Risotto alla Primavera with King Prawns


This risotto alla primavera with king prawns will surely make your dinner or lunch amazing. You can also check out the prawn primavera recipe at Gourmandia.

You will need:

2 tbsp olive oil 
150g uncooked risotto rice (Arborio, Vialone Nano or Carnaroli) 
1 jar Meena’s Risotto alla Primavera 
100ml water 
250g uncooked, peeled king prawns 
Kitchen foil

Instructions on How to Cook:


Preheat the oven to 180C/Gas Mark 4

Heat the olive oil in a saucepan and stir fry the uncooked risotto rice for 3 minutes or until slightly translucent

Pour over one jar of Meena’s Risotto alla Primavera sauce. Add water to the empty jar as far as the bottom line, below the label (approx 100ml) and add to the risotto. Add the prawns

Bring everything to the boil, transfer to an overproof dish and cover with a tight fitting lid (for best results cover the dish with aluminium foil first, then put lid on tightly)

Cook in the oven for 35 minutes without opening or stirring!

Remove from the oven and stir through – enjoy!

For best results serve drizzled with olive oil and sprinkled with parmesan shavings.
