A very important note here is that it must be fresh good berries. If you cannot find fresh gooseberries you can rather substitute any other kind of fresh fruit. It will be perfectly tasty with any available fresh fruit like lemon. Canned gooseberries are normally canned in a heavy syrup and you can think what that will do to the dish! No more healthy!

Ingredients: 

4 cups fresh or frozen gooseberries
1 small orange
1 tbsp clear honey
1 cup half-fat cottage cheese



Method: 

Top and tail gooseberries and place them in a pan.
Finely grate the rind of the orange and squeeze out the juice; add both to the pan.
Cover and cook gently, stirring occasionally, until the fruit is tender.
Remove from the heat and stir in the honey.
Purée the gooseberries with their juice in a blender or food processor until almost smooth
Cool
Press the cottage cheese through a sieve until smooth.
Stir half the cooled gooseberry purée into the cheese.
Spoon the cheese mixture into 4 serving glasses.
Top each with gooseberry purée.
