Easy Cold Buttermilk Soup


In this recipe, buttermilk is made into a cold soup for a wonderful appetizer during hot summer days. To make this unique recipe, you need eggs, sugar, lemon zest, lemon juice, vanilla extract, whipped cream, and buttermilk. You can serve this soup plain or garnish it with fresh avocados, sliced cucumbers, zucchinis, tomatoes, cooked and chilled potatoes, yogurt, or sour cream. Buttermilk can be bought in the grocery packaged in cartons just like regular milk. Traditionally, buttermilk is the liquid leftover after churning butter out of cream. It does not contain butter per se, since most of the fat has been churned out of it. Commercially, adding a culture like lactic acid bacteria to cow’s milk is how buttermilk is produced. After the bacteria is added to the milk, it is allowed to ferment for 12 to 14 hours at a low temperature. The lactic acid bacteria speeds the process of creating buttermilk. Otherwise, the process of milk turning into buttermilk can take place naturally but will take more time.Unlike popular misconceptions, buttermilk is not buttery high-fat milk. It is slightly sour tasting and somehow similar to yogurt in flavor and that it is low in fat. Sometimes, there can be tiny specks of creamy and sweet butter on the surface of the buttermilk liquid, which have not been skimmed off the top. Buttermilk has a slightly thicker texture than regular milk but thinner than cream. A half pint of true buttermilk can be made from a gallon of milk.

Ingredients

3 medium eggs, separate egg yolk
80gms white sugar
1/2 teaspoon lemon zest - grated
1 teaspoon lemon juice
1 teaspoon vanilla extract
¾ cup buttermilk
1/4 cup heavy whipping cream – whipped

Preparation Instructions

In a bowl beat the egg yolks till fluffy.

To egg yolks add sugar and beat well till it blends completely.

Later add grated lemon, juice and vanilla. Stir well.

Slowly add buttermilk and keep beating till smooth.

Pour into tall glasses and you can also add whipped cream on top.
