This banana loaf cake recipe bakes up moist and fluffy at the same time. This makes a luscious snack or scrumptious dessert served with coffee or tea. Self-rising flour is flour already mixed and packaged with a leavening agent, particularly baking powder, as well as salt. If you don’t have self-rising flour or can’t obtain it from your local grocery, you can combine a teaspoon of baking powder and a fourth of a teaspoon of salt for every cup of all-purpose flour.

A crucial rule when making moist and tender banana loaf cake is to never over mix the batter. Only blend the wet and dry ingredients until all the flour is well moistened. Ingredients

50gms sugar
2 tablespoon margarine
2 medium eggs, well beaten
2 ripe bananas
250gms flour, self-rising

Preparation Instructions
In a bowl mix sugar, margarine and eggs, stir well till smooth and fluffy. To this stir in the flour slowly to form a batter.

In a separate bowl mash the bananas and add to the above batter.

In a greased baking loaf pan pour this batter and bake it in a preheated oven for about 45-50 minutes at 350 degree F. Allow it to cool and serve.
