Bite Size Cheesy Spinach Cups



It's that time of year again, football season! I love to cook! I cook out of recipe books a lot but I also like to experiment on my own. The fun part is that I get to post them here, that way they will be recorded. So, lately I've been excited with crescent roll dough and having fun creating new recipes with it. I wanted to make something with the mini muffin tray, since it's easy to form a shape there so I came up with these spinach and cheese cups. 

The amazing part was that the kids loved them which I thought they wouldn't. I think these can be done quickly for guests or to take to a potluck or even to send in the kid's lunchbox or add some video potato galette, they are multipurpose! 

Ingredients 
1 8 oz can of crescent roll dough 
1 tablespoon of olive oil 
1 1/2 cup frozen spinach (thawed) 
1/2 cup chopped onions 
1/4 teaspoon of salt 
1/4 teaspoon of garlic paste 
 1/2 cup cream cheese 
 2 1/2 teaspoons of grated parmesan cheese

Directions 



1. Preheat the oven to 350°. Unroll the crescent roll dough and separate into 4 squares. Then cut each square into 6 little squares. 

2. In a pan, heat the olive oil and add the onion, salt and garlic and sauté until soft and translucent. Then add the spinach and sauté until is all heated. Place in a bowl and combine with the cream cheese. 

3. Press dough squares into mini muffin tray cups, it won't fill the hole completely but it's ok. 

4. Fill each cup with the spinach and cheese mix and top with a little bit of parmesan. 

5. Bake for 12 minutes and the broil on low for 2 minutes. Take them out of the oven and serve right away!
