Athenian Pizza as Appetizer


A staple in Greek, Mediterranean, and Middle Eastern Cuisine, pita bread is flat bread that has a wide variety of uses. In this recipe, pita bread is used to make a quick and scrumptious pizza topped with spaghetti sauce, eggplant, sweet red bell pepper, pepperoni, and onions. Pita bread is available in many grocery stores and specialty shops, as well as in Middle Eastern or Mediterranean restaurants. With readymade pita bread and all the ingredients at hand, you can make a delicious pizza in as little as 10 minutes. This makes it an awesome party as one of the food appetizer recipes and filling snack.

Fresh pita bread is best when making this recipe. Two or three day old packaged pita breads don’t compare to freshly baked or steamed pita bread. Basic pita bread is made flour, salt, water, sugar, yeast and oil. Although there are some varieties that do not use yeast and omit the sugar. Pita bread is also distinctive for its pocket left in the middle after it is steamed, which puffs up while it is being heated and then flattens.

Ingredients

3 tablespoons oil

1 medium eggplant, sliced thin

1 large sweet red bell pepper, chopped

6 pita breads

1 1/2 cups pre-made spaghetti sauce

3 oz. pepperoni

1 onion, chopped


Preparation Instructions



In a saucepan, heat the oil over medium. Add the eggplant slices; cook until golden brown. Using tongs, remove the eggplant and drain on paper towels. Add the red pepper and saute until tender-crisp. Drain on paper towels.

Separate the pita breads and arrange on a baking tray. On the separated pita bread, evenly spread the spaghetti sauce. Over this, lay the eggplant, red pepper, pepperoni, and onion slices.

Bake in a 350 degree F. preheated oven for about 5 minutes. Serve hot or cold.
